In 1784, chemist Carl Wilhelm Scheele was the first person to isolate citric acid from lemon juice. Aside from occurring in lemons, this fruit acid is also present in a variety of other fruits, including apples and berries. Citric acid is used as both a flavour enhancer and a preservative. Another interesting fact is that citric acid is also created by metabolic processes in our bodies!
Today, citric acid isn’t usually extracted from lemons any longer because doing so is too laborious when large quantities are involved. Instead, a fermentation process is used. HEITMANN uses only renewable raw materials to produce its 100 per cent Pure Citric Acid.
